Scaling changes the displayed ingredient quantities, but the method stays the same. For larger groups, use the batching guide rather than shaking several drinks at once.

Fresh & bright

Cucumber Mint Lime Cooler

Crisp, cooling and deliberately gentle with the mint.

Ingredients

  • 3 thin cucumber slices
  • 6 mint leaves
  • ¾ oz fresh lime juice
  • ½ oz simple syrup
  • 3 oz chilled soda water

Method

  1. Gently press cucumber and mint in a shaker just until fragrant.
  2. Add lime, syrup and ice; shake for 8–10 seconds.
  3. Fine-strain over fresh ice, top with soda and stir once.

Lesson: Gentle muddling releases aroma without bruised, vegetal bitterness.

Substitute or adjust: Swap basil for mint. If the cucumber is watery, add one extra slice; if the drink is sharp, add ¼ oz more syrup.

Spiced & rich

Ginger-Pear Sour

Soft pear, bright lemon and a ginger snap under a silky cap.

Ingredients

  • 2 oz pear nectar
  • ¾ oz fresh lemon juice
  • ½ oz ginger syrup
  • ½ oz aquafaba
  • 1 oz chilled soda water, optional

Method

  1. Add pear, lemon, ginger syrup and aquafaba to a shaker; shake without ice for 15 seconds.
  2. Add ice and shake hard for another 10–12 seconds.
  3. Fine-strain into the glass; add soda down the side if using.

Chilled coupe, no ice; or rocks glass, one large cube

Thin pear fan or lemon twist

Lesson: A two-stage shake builds stable foam, while lemon keeps sweet nectar in focus.

Substitute or adjust: Omit aquafaba for a lighter drink and shake once with ice. If the nectar is very sweet, reduce ginger syrup to ¼ oz.

Ingredient note: Aquafaba is chickpea liquid; disclose the legume ingredient.

Bitter & dry

Rosemary Grapefruit Spritz

An herbal, lightly bitter spritz with a long citrus finish.

Ingredients

  • 2 oz grapefruit juice
  • ½ oz fresh lemon juice
  • ½ oz rosemary syrup
  • 2 oz chilled tonic water
  • 1 oz chilled soda water

Method

  1. Add grapefruit, lemon and rosemary syrup to an ice-filled glass.
  2. Stir for 8 seconds, then add tonic and soda.
  3. Stir once from the bottom and express the grapefruit peel over the surface.

Lesson: Splitting tonic with soda controls bitterness while preserving lift.

Substitute or adjust: Use all soda for a softer, quinine-free finish. Sweeter bottled grapefruit may need only ¼ oz syrup.

Ingredient note: Tonic contains quinine. Grapefruit can interact with some medicines.

Fresh & bright

Peach Black Tea Smash

Tea gives supermarket peaches a dry backbone and real length.

Ingredients

  • 2 oz strong chilled black tea
  • 2 ripe peach slices
  • ¾ oz fresh lemon juice
  • ½ oz honey syrup
  • 2 oz chilled soda water

Method

  1. Press the peach slices in a shaker until juicy.
  2. Add tea, lemon, honey syrup and ice; shake for 10 seconds.
  3. Fine-strain over fresh ice, add soda and stir once.

Lesson: Tannic tea adds the dryness and structure often missing from fruit-forward drinks.

Substitute or adjust: Use 1 oz unsweetened peach nectar when peaches are out of season. If using sweetened nectar, begin with ¼ oz honey syrup.

Spiced & rich

Cranberry Orange Mule

Tart cranberry and orange oils meet the warmth of ginger.

Ingredients

  • 2 oz unsweetened cranberry juice
  • ½ oz fresh orange juice
  • ½ oz fresh lime juice
  • ½ oz maple syrup
  • 3 oz chilled nonalcoholic ginger beer

Method

  1. Add cranberry, orange, lime and maple syrup to an ice-filled glass.
  2. Stir until thoroughly chilled and the maple dissolves.
  3. Top with ginger beer and stir once.

Lesson: Orange softens cranberry’s hard edge; maple bridges the fruit and ginger.

Substitute or adjust: If using sweetened cranberry cocktail, omit maple at first. Use ginger ale for less heat and reduce or omit the syrup.

Label note: Check that the ginger beer is alcohol-free and suitable for your guests.

Spiced & rich

Pineapple Cinnamon Fizz

Tropical without turning sugary, thanks to lime, spice and salt.

Ingredients

  • 2 oz pineapple juice
  • ¾ oz fresh lime juice
  • ¼ oz cinnamon syrup
  • 1 small pinch kosher salt
  • 2 oz chilled soda water

Method

  1. Add pineapple, lime, cinnamon syrup and salt to a shaker with ice.
  2. Shake hard for 10 seconds to aerate the pineapple.
  3. Strain over fresh ice, add soda and stir gently.

Lime wheel and light dusting of cinnamon

Lesson: Salt in a tiny dose sharpens fruit and restrains perceived bitterness; it should not taste salty.

Substitute or adjust: Use ¼ oz simple syrup plus a pinch of ground cinnamon if needed, then fine-strain. Very sweet pineapple may need no syrup.

Bitter & dry

Apple Sage Sparkler

Crisp apple, savory sage and a dry vinegar snap.

Ingredients

  • 2 oz unfiltered apple juice
  • ½ oz fresh lemon juice
  • ¼ oz apple cider vinegar
  • ¼ oz honey syrup
  • 3 oz chilled soda water
  • 2 small sage leaves

Method

  1. Clap one sage leaf between your palms and add it to a shaker.
  2. Add apple, lemon, vinegar, honey syrup and ice; shake for 8 seconds.
  3. Fine-strain over fresh ice, add soda and stir once.

Second sage leaf and thin apple slice

Lesson: A small vinegar measure creates dry complexity; too much overwhelms the fruit.

Substitute or adjust: Swap thyme for sage. If the apple juice is tart, omit lemon at first; if it is sweet, increase lemon by ¼ oz.

Serve with care: Verify any product labeled alcohol-free meets attendee needs; standard bitters can contain alcohol unless specifically zero-proof. Disclose aquafaba/chickpea, tonic/quinine and other relevant ingredients. Grapefruit may interact with some medicines.
